Veggie potato bake

My first ever veggie potato bake.
Two layers of thin sliced potato, onion, chopped kale and beets stems, parsley, a touch of pepper, salt. Soy milk, cheese and butter on top.
This is a modification of Vegan in Bellingham’s Yummy Easy Vegan Potato Onion Herb Bake recipe.
